Venison Ham and Egg Breakfast Casserole – HuntChef Edition

They say breakfast is the most important meal of the day.  However, if you’re not including wild game in your breakfast, then you’re missing out!  Here’s an easy and tasty way to mix your favorite wild game delicacies into your breakfast meal!

The ham that is utilized in this recipe was made using HuntChef’s Brown Sugar Brine Kit.

Venison Ham and Egg Breakfast Casserole Recipe – HuntChef Edition

Here’s a quick and easy recipe that combines your favorite wild game breakfast meat with an easy all-in-one morning delicacy.

  • Total Time:
    • Prep Time:  15 mins
    • Cook Time:  20 mins (fresh), 45 mins (cold)
    • Resting time:  5 mins or less


  • 3 cups Frozen Hash Brown Potatoes (shredded or cubed)
  • 12 Eggs
  • 1.5 cups Cubed Deer Ham, made according to the HuntChef Brown Sugar or Country Brine Kit
  • 8 oz Shredded Cheddar Cheese
  • 1/2 cup Heavy Cream
  • Salt and Pepper
  • Butter
  • Cooking spray

Egg Add-in Ingredients

  • Pepper
  • Herbs
  • Tomato
  • Mushroom
  • Broccoli
  • Spinach
  • Onions

Transform Frozen Hashbrowns:

Step 1:  Cook 3 cups of frozen hash browns, shredded or cubed).  Follow the manufacturer’s directions to cook the hashbrowns.

Tip:  For crispier hash browns, cook them in an air fryer!  This is important to ensure the hashbrowns do not get soggy when cooking. You can also bake hashbrowns or fry them in oil.  A spritz of cooking spray will help you achieve a golden brown color to your hashbrowns.

Note:  You can increase the serving size of the recipe by increasing the amount of hashbrowns, however, the more hashbrowns you utilize, the chance of them getting soggy increases.

Prepare the Eggs:

Step 2:  Whisk 12 eggs and 1/2 a cup of heavy cream together.

Step 3:  Season whisked eggs with salt and pepper.

Step 4:  Melt 2 tablespoons of butter on medium heat.

Step 5:  Add the vegetables that you would like to include in the pan with melted butter and cook until softened.

Step 6:  Add the eggs to the mix of vegetables and cook on medium heat until they’re barely set (or “soft set”).

Step 7:  Set the soft set egg mixture to the side momentarily.

Layers of Breakfast Goodness:

Step 8:  Spray a 9 x 9 baking dish with cooking spray.

Step 9:  Place your golden brown hash browns in the bottom of the non-stick, seasoned 9 x 9 pan.

Step 10:  Evenly spoon in the soft set egg and vegetable mixture evenly overtop the hashbrowns.

Step 11:  Add 1.5 cups of venison ham.

Step 12:  Sprinkle the eggs with 8 ounces of shredded cheddar cheese.

Step 13:  Top with French fried onions.

Bake and Serve:

Step 14:  Preheat the oven to 350 degrees

Step 15:  Bake at 350 degrees for 20 minutes if prepared fresh.

Step 16:  If prepared prior to cooking and the mix of ingredients has been stored in the refrigerator, bake uncovered at 350 degrees for approximately 45 degrees.

Step 17:  Serve with salsa or sour cream.
