Tips for Making the Best Homemade Sausage
- For the best results, experiment with different meats and ratios of mixtures. Venison is a very lean meat unlike most domestic meats such as pork and beef. You might want to add another meat to fatten up your sausage.
- Cut the mean into small enough chunks so that it easily fits into the grinder.
- Ensure the meat grinder is cold! If you can, run cold water through it or ice maybe.
- Keep the meat cold. This will prevent it from sticking to the grinder as much as possible.
- Apply enough spice or seasoning to the meat prior to grinding it.
- Add enough water to the meat to allow the seasoning to permeate all of the meat before grinding begins.
You can apply these tips anytime you’re making sausage, including stuffed peppers, sausage patties, meatballs, or stuffing it into casings for later use.
Ingredients
- 5#’s of Venison
- Mozzarella Cheese
- Provolone Cheese
- Parmesan Cheese, grated
- HuntChef Hot Italian Sausage Mix
- Olive Oil

Turn Venison Into Venison Sausage:
Step 1: Cut up 5 pounds of venison. Cutting the meat into smaller chunks will help your grinder do its job and create better sausage in the process. You will want to size the meat to your grinder!
Step 2: Season the 5 pounds of cut-up venison with one pouch of HuntChef Hot Italian Sausage seasoning. There are two pouches in each package and you’ll need only one of them for this recipe.
Step 3: Chill the 5 pounds of cut-up venison and the grinder if possible. This makes it easier for the meat to slide through the grinder.
Step 4: Send the seasoned venison through the grinder for the first time.
Step 5: In a large bowl, add 1/3 cup of water to the seasoned meat after grinding it for an initial time. Hand mix the water into the sausage mixture.
Step 6: Send the deer sausage through the grinder a second time.
Use the Meat Grinder to Stuff the Banana Peppers
Step 7: Install the “horn” onto your meat grinder. If you do not have a meat grinder or it doesn’t have the horn attachment, there are aftermarket options that you substitute here but it’s much quicker if you can do it all in one place.
Step 8: Cut a large hole in the top of the banana pepper and place it over the horn of the meat grinder. You will need to cut a small hole in the end of the banana pepper to allow any air to exit ensuring a fully filled banana pepper each and every time.
Step 8: Fill each banana pepper with sausage.

Time to Cook the Venison Sausage Stuffed Banana Peppers:
Step 9: In a hot cast iron skillet, pour in enough olive oil to cover the bottom of the skillet and then add the venison stuffed banana peppers
Step 10: Place the skillet with contents into the oven at 350 degrees.
Step 11: Remove the skillet from the oven once the banana peppers have begun to carmelize and tenderize.
Step 12: Add marinara sauce liberally to the sausage links inside the skillet.
Step 13: Apply mozzarella and provolone cheese blend on top of the banana peppers that are still inside the skillet.
Step 14: Add full-sized basil leaves around the edges of the skillet for maximum flavor.
Step 15: Cover everything in grated parmesan cheese.
Step 16: Place back into the oven at 350 degrees until done
Step 17: Remove, let cool, and serve!

Whether they like what they enjoyed as a kid or have grown into or discovered…the one thing that I’ve found makes a huge difference to people is the texture of the grind. By that, I mean whether you grind the sausage on the smallest die or on the largest it makes a difference to people! For most of my fresh wild game sausage, I prefer to run it twice on my medium-sized die, this seems to mix the seasoning the best and keeps the texture from being grainy (too fine) or too coarse (too big). It’s possible to substitute ground venison but you may not need to run it through the meat grinder as much.
